Does anyone produce chips or shavings for smoke-houses?


If so, do you dry and debark first and what machinery do you use and what is the finished product like?

A friend of ours used some oak sawdust that was left after some milling work - yum yum!

Trying to find a use for the Alder I took down in the winter and one reference recommends it as good for smoking!

If you ever require oak chippings let me know I can supply 50 k bags.by the bye alder makes the best charcoal in the uk. Did a scientific analysis on British charcoal at university

...............and is still using it, as long as I can keep it dry I shall be using it for years to come!!


Smoked some home cured pancetta with it over Easter, 'twas rather good.
